Mythos 2 On-Demand is a medium-to-high volume commercial grinder built on the groundbreaking Mythos platform, considered by many Baristas to be the best in the industry. It comes branded either “Nuova Simonelli” or “Victoria Arduino” in either a Matte Black or Pearl White finish.

Like its predecessor, it has programmable dose settings with a stop & go/reset feature if the dose is interrupted. It’s unique transverse motor/burr doser-less design with clump-crusher means every shot is fresh ground directly into your portafilter in a perfect cone-shaped pile with zero hold-back, hands-free. Mythos 2 now includes a programmable one-touch “purge” feature, and 6 separate coffee profiles can be programmed for shot times, burr temperature, one-touch purge settings, and grind speed (Variable-Speed model).

Now coming standard with massive 85mm Titanium burrs, Mythos 2 delivers unprecedented grind speed, near-silent operation, with a long gap between burr replacements. Micrometric grind adjustments (to dial in that perfect grind), work lights, and several new features – including an adjustable portafilter fork, a chalkboard on the back, and a larger 2 kg easy-feed hopper with an “empty hopper” warning – make this the best grinder in its class. Mythos 2 Clima-Pro 2.0 Variable-Speed-and-Temperature: This ground-breaking grinder comes standard with an improved heating/cooling system, to better maintain burr-temperature stability. Clima-Pro technology fixes the challenge of burrs heating and cooling throughout the day’s busy and slow times, so the grinder not only doses more consistently but the barista isn’t required to constantly re-adjust the grind to compensate, reducing time and waste.

This new Clima-Pro 2.0 version allows the temperature to be adjusted from 30 to 50 degrees celsius depending on the coffee’s specific properties, so the barista has greater control when delivering a perfect fluffy pile of grounds in as little as 2 seconds with no static or hold-back.

It also adds a variable speed motor (programmable from 400 to 1,200 RPM), so Baristas have the option to choose a slower grinding time (to better protect their more delicate coffee beans) or a faster speed to lower production time. Motor speed can be programmed into each of the 6 coffee profiles via the touchscreen.
