This stunning Japanese blade features an FC61 super steel core that helps make it incredibly sharp. It has 48 outer layers of stainless steel that wrap the core creating the unique Damascus design and wavy katana edge.

The FRIODUR twice ice-hardened blade has a Rockwell hardness of 61, so you can be confident in the knife’s strength, stability, and resistance to corrosion.

This Miyabi 5000 FCD Kaizen II 8” Chef’s Knife has also been hand-finished using the 3-step Honbazuke method. This traditional Japanese honing method delivers an extremely sharp and symmetrical cutting edge with an angle between 9.5 and 12 degrees. The ergonomically shaped handle is made from black pakka wood and is finished with an elegant mosaic pin and end cap. It provides you with a comfortable grip that allows for excellent control while reducing fatigue.

Ideal for any task from slicing up meat and fish to chopping and dicing large vegetables to finely mincing herbs.
